Slow Cooker Chicken Posole

Posole is one of those recipes that brings back memories for me. I’m thinking Christmas morning, heading over to celebrate the holiday at my PapaCino’s house. That’s my cute little name for my Grandpa. It meant family, joy, togetherness, and a sense of warmth. Great food, great people, great days.

I would also look over rather squeamishly at the menudo and be thankful that my family always made posole. Tripe has always weirded me out, and rightly so. I may be willing to try new things, but intestine just isn’t my thing.

By the way, have you ever tried hominy? It’s corn that has been treated through a process called nixtamalization, which leaves you with this kind of puffy version of a corn kernel. I think it has an interesting texture and is definitely a new way to try an old staple! And it provides a nice, starchy vegetable for this recipe.

Ok, so my family (here’s looking at you Aunt Roxy) may consider this one a little less than authentic, but it still tastes AMAZING! And it’s so easy because it’s made in the slow cooker. I used chicken breast instead of pork to provide a leaner protein, which creates an overall lighter dish.

Be sure to pull out your chicken breasts and shred them well before returning it to your posole to serve. You want nice little pieces that are easy to pick up with a spoon.

It can be as jazzed up or as plain as you like it. Personally, I’m a big fan of adding radishes and avocado, but a little green cabbage would have tasted amazing. But maybe you like cheese, tortilla chips, sour cream, or raw onion? Whatever you enjoy, go for it!

Slow Cooker Chicken Posole

A healthy, quick, delicious to make Chicken Posole right in your slow cooker! Top it with some radish, avocado, lemon or lime, and you are golden.

Ingredients

Scale
  • 2 lbs chicken breast tenders
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 can white or yellow hominy, drained
  • 2 chicken bouillon cubes
  • 2 tsp dried oregano
  • 3 bay leaves
  • 2 lemons or limes

Toppings:

  • 1 cup sliced radishes
  • 1 avocado, sliced
  • paprika
  • Cilantro, for garnish
  • more limes

Instructions

  1. In the bottom of your slow cooker, place chicken breast tenders. Top with onion, garlic, hominy, and bouillon cubes. Pour in 2 quarts of water, and season with oregano, bay leaves, salt, and pepper, along with the juice of 1 lime. Cover and let cook on low for 8 hours.
  2. Remove chicken from the slow cooker. Use two forks to shred the breasts, and then add back to your posole. Portion out into bowls and top with radishes, avocado, paprika, salt and pepper. Garnish with cilantro and more lime juice.

    Actually, I love chicken Pozole . It’s one of my favorite winter dishes. Yours looks yummy and I’m going to Rename is Sammys Pozole.

      I love hearing that! I didn’t know how true to nature the recipe was. I wanted to keep things that I loved, but I thought the slow cooker made it easier to have as a regular weeknight meal. Thank you!
