I don’t know about you, but we are finally feeling the heat down here in San Diego. In fact, they say we’re right in the middle of a heat wave; which for us, the 90’s to 100’s is unbearable! Especially when you don’t have air conditioning.
Which means that I don’t want to have to heat up my house any farther with the stove, the oven, etc. So a beautiful, fresh salad is exactly what the day calls for! And adding cool elements, like chilled watermelon, cucumber, goat cheese, and raw red onion is perfect!
To keep the house cool, try grilling your chicken at the beginning of the week during your meal prep (as announced on instagram- follow @thesamanthaelaine) or used canned chicken breast.
To assemble, simply add all the ingredients together, and toss with your favorite dressing! We used Bolthouse Farms Honey Mustard- it has a spicy kick!

Ingredients
- 8 cups mixed greens
- ½ red onion
- 1 cucumber
- 2 cups cubed watermelon
- 4 ounces goat cheese, crumbled
- 1 ½ lbs cooked chicken breast
- Dressing of choice- try honey mustard or balsamic!
Instructions
- To cut the red onion, quarter it through the root end and peel off the papery layers. Save half the onion for another meal. Thinly slice the other half to create quartered slices.
- Repeat the same process for the cucumber.
- Toss with the remaining ingredients. Divide between four plates. Enjoy!
