Cauliflower Mash

Cauliflower Mash that tastes just as indulgent as potatoes

A great low-carb substitute for mashed potatoes. Plus it’s made a lot lighter without cream!

Ingredients

  • 16 ounces cauliflower florets
  • 2 tbsp butter *
  • 3 tbsp nonfat Greek yogurt *
  • 1/2 tsp thyme
  • 1/2 tsp garlic powder
  • Salt and pepper

Instructions

  1. Steam the cauliflower until soft, about 5-10 minutes, depending on method. While still hot, add cauliflower to a food processor or blender.
  2. Add in butter, yogurt, thyme, garlic powder, salt, and pepper. Pulse until smooth.

Notes

*To make this dish dairy-free, use vegan butter and yogurt.
