Easy roast chicken that you can make right in your slow cooker!

Slow Cooker Lemon Herb Roast Chicken

Do you want to know one of reasons I started this blog? It was to inspire people. To let them know that cooking can still be fun, that you can always learn, that you should be excited to make your dinner! It makes me incredibly happy to see people talking about my recipes, but also their own, and inspired to get back into the kitchen and start creating. After all, we have to eat!

Lately, I’ve been on a low-key streak. It doesn’t have to take hours for something to taste great. Are you looking for the most hassle-free dinner around? Then you have to try this Slow Cooker Lemon Herb Roast Chicken! It’s the easiest thing to make on the whole damn planet, and it tastes pretty good too. You can use your roasted chicken with any of my salad recipes, like this Watermelon Chicken Salad or even the BBQ Chicken Salad with “Fried” Onions.

Literally, here are the steps:

Add the chicken to your slow cooker.

Season it with any preferred combination of herbs and/or spices. I kept it simple with thyme, salt, and pepper. Cover with lemon slices, and fill cavity with lemon ends. This keeps it juicy and imparts subtle flavor.

Let it cook for about 8 hours. That’s it!

You come out with a juicy, tender chicken that can be completely shredded or separated into it’s major segments: the breasts, thighs, and legs.

Slow Cooker Lemon Herb Roast Chicken

Ingredients

Scale
  • 1 whole fryer chicken, giblets removed
  • 2 tsp dried thyme
  • salt and pepper
  • 1 lemon, sliced

Instructions

  1. Rub chicken all over with dried thyme. Season with salt and pepper to taste and place inside slow cooker. Arrange lemon slices on top of chicken, and stick the ends of the lemon inside the cavity.
  2. Replace lid and set slow cooker to low and let it cook for about 8 hours. The meat will be tender and will shred easily.
