A healthy, quick, delicious to make Chicken Posole right in your slow cooker! Top it with some radish, avocado, lemon or lime, and you are golden.

2 lbs chicken breast tenders
1 medium onion, diced
4 cloves garlic, minced
1 can white or yellow hominy, drained
2 chicken bouillon cubes
2 tsp dried oregano
3 bay leaves
2 lemons or limes
Toppings:
1 cup sliced radishes
1 avocado, sliced
paprika
Cilantro, for garnish
more limes
Instructions
In the bottom of your slow cooker, place chicken breast tenders. Top with onion, garlic, hominy, and bouillon cubes. Pour in 2 quarts of water, and season with oregano, bay leaves, salt, and pepper, along with the juice of 1 lime. Cover and let cook on low for 8 hours.
Remove chicken from the slow cooker. Use two forks to shred the breasts, and then add back to your posole. Portion out into bowls and top with radishes, avocado, paprika, salt and pepper. Garnish with cilantro and more lime juice.
