Italian Stuffed Bell Peppers

A super easy, healthy dinner that the whole family will love!

Ingredients

  • 6 bell peppers
  • 1 ½ lbs 90% lean ground beef
  • 1 cup shredded mozzarella, divided *
  • 2 cups marinara sauce
  • 1 cup chopped spinach
  • 1 1/2 cups cooked quinoa

Instructions

  1. Preheat oven to 350. To prepare bell peppers, cut the top off and core out the insides of each pepper. Set in a 9×13 baking pan, tops set aside, while the filling is prepared.

  2. In a medium pan, brown the ground beef until cooked through. Drain.
  3. Add cooked beef to a large bowl along with ½ cup mozzarella cheese, marinara, and spinach. Combine and then spoon the filling evenly into the bell peppers. Top with remaining cheese and replace bell pepper tops.

  4. Let cook in the oven for 30 minutes and then serve with quinoa, if desired.

Notes

*To make this dish dairy-free, try using a vegan cheese alternative, like soy or almond cheese.
